Pandan Coconut Cookies

Flashing back few months ago, I had to honour myself hehe for making raya cookies. 

Fasting at daytime, havingt terawikh and extra classes for kids and yet I've baked cookies. Since we have coconut flakes and  been seeing a lot of viral pandan cake gula melaka, I couldn't sit still but baked some not cake but cookies. 

How it turned out didn't bother me. What I cared the most was the mood and the aroma of coming hari raya that I could give at that moment. It cheered everybody up, inbthe distinguished month of Ramadan that they were in. That's what any parent could do right to bloom the atmosphere of winning  celebration ahead.

The aroma of pandan, coconut raised as well as coconut sugar, gave combination awsome fragrance. Loved and missed the moment. Cakey cookies have been the centre of attraction, the main focus to look forward to. It's yummy tastes that melted in your mouth.

Imbas kembali beberapa bulan dahulu, saya rasa berbesar hati buat diri sendiri hehe.. kerana telah rajin mengadun tepung dan membakar biskut raya. 

Berpuasa di siang hari, malam berterawikh, juga ada kelas extra untuk budak-budak lepas solat sunat tu masih larat lagi untuk buat kuit ala tart.. Saya bersemangat kerana bahannya dah  sedia ada, iaitu flakes kelapa parut masih dalam simpanan. Lagi-lagi kerap lihat kek pandan gula melaka menular merata tertambat mengidam. Tak boleh jadi, duduk tengok saja mesti berganjak ke membakar biskut. 

Jadi tak jadi tu, belakang kira, kerana tepung telur masak sekejap dah boleh makan. Logiknya kerana telur separuh masak  diamal ramai. Yang penting, aroma dari mentega, pandan, bauan gula kabung, kelapa parut tu memukau hati. Itulah yang dapat saya memeriahkan keadaan di bulan ramadan. Ia menceriakan malam dari malam biasa menuju bulan Syawal. Ia menjadi tumpuan utama pada malam tu. Sebagai ibu, ini adalah salah satu cara untuk membangkitkan suasana  merayakan kemenangan yang bakal menjelma. Wangi pandan, mentega serta gula kabung menyelebungi udara malam tu. Rindu momen tu, semua menumpu perhatian di dapur sambil menunggu biskut masak untuk merasa biskut yang sedap dan yang cair dalam mulut. serta aroma biskut itu sendiri mengamit selera. SubhanAllah. 

Sesambil menaip mama menonton Fikrah TV1 berkenaan Tokoh Maal Hijrah 2021, teringat arwah Tok saudara yang mana adik arwah Mak Tok juga Tokoh Maal Hijrah nak kena search tahun apa. Al-Fatihah. 


Chilled Karipap

Karipap sejuk dibakar atau digoreng seeloknya?

The season of karipap is in the house. It happened when I started learning to do it. Love the taste of the bite of karipap. Making it was not fast but furious. Sometimes I made it a lot for next time. That was when I could sit and eat the karipaps slowly. 

The chilled karipaps I've kept. I didn't freeze them yet. Doubt it to be as good after freezed them. Took them out that morning, placed them on the oven tray. I baked this time around. I was prudent with cooking oil at starts. BTW, didn't I mentioned that we got cooking oil and rice for Aidil Adha gift from surau nearby? When the karipaps were cooked, I pulled the tray and noticed that they were slightly darken but Alhamdulillah it turned out delicious and nutritious.

Musim karipap menjadi-jadi di rumah. Berlakunya stok karipap menaik setelah saya mula belajar buat karipap . Suka rasa pastri dan inti karipap tu. Membuatnya taklah cepat tapi penat. Kekadang saya buat lebih untuk simpan. Bila senang  segar badan cergas untuk duduk menikmatinya dengan perlahan. Karipap yang disimpan cuma disejukkan, rasa cuak pula nak sejukbeku takut nanti tak sesedap yang diharapkan hehe.. 

Ambil karipap sejuk dari peti sejuk. Letak di atas dulang ketuhar. Mulanya amalkan kurangkan minyak, jadi bakar dalam ketuhar. Sekarang ni tetiba aje ada minyak, beras, biskut pemberian dari pihak surau berdekatan sini sempena hari raya haji. Ghairah juga dapat menggoreng nanti sebab dapat minyak. Buka oven bila bunyi loceng sudah masak, tarik dulang tu nampak warna perang ketara tapi Alhamdulillah sedap dan sihat karipap tanpa minyak. Bolehlah cuba :)

Rindukan Old Town Hainanese


Struggle juga keluarkan tulang isi peha ayam

We sometime had Hainanese Chicken Rice when we went out. The different between chicken rice and hainanese rice is that the sauce is with mixed vege. The chicken meat is boneless. We struggled to debone the chicken thigh. Successfully, we made it through. Learnt it from you tube video though. We supposed to mix the fried potatoes in the gravy as well. When we saw the fried potatoes were soft inside and crispy outside, we reserved it for eating just like that. The deboned chicken thigh were so good and as for the keel chicken were cut thin but didn't separate. It was as good as well. Loved the servings and how it turned out. 

We followed the recipe from the internet, altering a bit to wharever available at home. The meal is good business product.

Kami pernah juga makan Nasi ayam Hainanese bila keluar. Perbezaan di antara nasi ayam Hainanese dengan nasi ayam biasa ialah sosnya ada mix vege. Daging ayamya adalah bahagian peha dikeluarkan tulang. Susah nak keluarkan tulang tapi kami berjaya. Belajar pun dari youtube aje. Tungkus lumus juga, risa daging menjadi hancur. 

Tentang ubi kentang, lepas goreng, sedap sangat nampak hingga tak jadi campur dengan kuah. Lembut di dalam tapi rangup di luar. Goreng biasa tapi deep fry. Tiba tiba rasa nak makan begitu saja.

Isi peha yang juga dikeluarkan tulangnya sangat enak, bahagian dada juga dihiris nipis tapi tak putus juga sedap, lembut seakan bahagian peha. Suka masakan kali ni tak sangka terjadi lazat. Alhamdulillah. Ikut resepi tapj diolah sedikit sebanyak ikut apa yang ada dirumah. Masakkan begini senang  dibawa jual ;}

Ada saja yang tiada bila mahu buat eksperimen, video diteruskan

Kena cuba, baru tahu, kan

There comes the time for macaroni day. We simply fulfil their request. We rotate a week or two, the macaroni will make an appearance on the eating table. Sometime featuring with breaded fish, mostly none. Had one or two bowls, yet the tummy told the mind that it will be hungry in two hours time. Why? The reason might be because of not so much of grounded meat in the sauce. That means it's too much carbo but lack of protein, and yes...hungry for me. I realised that when we are eating out, the bolognese sauce will come with loads of cheese on top, that's lots of protein from the cheese. . I will get full in an instant and this will last for the next meal time. So it's normal right, when feeling hungry in between and it's like: what has gone wrong? 


We have leftover chilled macaroni and the sauce from the fridge, unfortunately when I wanted to experiment it, a sliced cheese but only left with one slice. I had to divide it in three equal portions. So manageable and full feeling, and didn't have a desire to eat anything else after that. Alhamdullilah happy ending.

Akan ada suatu hari dimana kuah merah bolognese makaroni disajikan. Mengotakan permintaan budak-budak. Selang pusing seminggu dua, macaroni akan menjelma di atas meja makan, sesekali ada jemputan ikan salut tepung, walaupun biasanya tiada. Makan satu atau dua mangkuk, tetap isyarat dari perut ke minda memperkatakan yang ia masih lapar. Kenapa ya?  Sebabnya tak banyak daging kisar di dalam sos, boleh jadi. Maksudnya terlalu banyak karbo manakala kurang  protin. Ya, masih lapar bagi mama. Saya perasan bila makan di luar, kuah bolognesenya  ditutupi dengan cheese yang tebal, keju dari susu, superfood, baby pun cepat membesar. Terasa kenyang hingga ke waktu makan yang lain tak la di antara. Brunch bagai takda la masa. Barulah normal kan, kalau lapar di tengah jalan, ada tak kena tu. Saja nak ambil minum petang tu ok ni sebab lapar. 


Saya keluarkan lebihan macaroni bolognese yang sejuk dan sosnya juga sejuk dari peti ais. Tetiba keju keping tinggal sekeping. Bertabahla bahagi dua, eh bukan! tiga. Panaskan, teruruslah juga segalanya, rasa kenyang alhamdulillah selepas makan makaroni kali ni. Tak da rasa nak makan lagi. Berakhir dengan kegembiraan :) (Kalau emak saya, akan cakap tiada permulaan apa2 pun kenapa ending hehe rindu bondaku❤️

Mudah potong, rasanya sedap

Sambil pegang handphone, sambil tabur serbuk kayu manis, tercurah

After sending kids to school, stop at the restaurant near by for breakfast. Since the pandemic, we tried to minimise going to places. Actually we thought twice to send kids to school but last year the case was low and even our  DG KKM got global recognition for his success to manage the difficult situation. Some say it was too early. There's blessing in disguise as people here will get culture shock if the changes are abruptly. 

Like 10 minutes from school we arrived home, cut banana slices, laid them on bread. Sprinkle with cinnamon powder. Instead of jam, we made it differently with sliced banana. Took photos of every corner even stomach made growling noises. 


Selepas menghantar anak-anak ke sekolah, kekadang berhenti di kedai berdekatan untuk menjamah sarapan. Sejak berlaku pandemik, cuba kurangkan pergi ke tempat- tempat yang tidak berkenaan. Sebenarnya terfikir dua kali juga untuk melepaskan anak ke sekolah tetapi masa tu kes masih kurang manakala Director General KKM pun mendapat pengiktirafan antarabangsa kerana berjaya kendali situasi pandemik yang payah ini dengan baik. Setengah pihak mengatakan ia terlalu awal tapi bersyukur dan lihat positifnya yang penduduk kita pun mungkin mrngalami kejutan budaya jika berubah terlalu cepat. 


Dalam 10 minit dari sekolah kami sampai di rumah. Potong pisang, atur diatas roti, terlangkup dengan roti kosong di atas pisang. Potong empat, letak elok-elok dan tabur serbuk kayu manis diatasnya, lalu ambil gambar setiap penjuru. Pusing sana pusing sini, baru makan. Perut berkeroncong bagai nak rak, tetap nak ambil video jugak.

Sushi sedang digulung

Beras sushi disimpan, dalam video gulung mudah pun ada tercicir, salah kaedah? 


When the annoucement of PKP had passed, the usual routine had stopped but the food on the plate kept going on. Though food will be alerted by growling tummies, I'd like to make sure the food will always be on the table when it is eating time. Try lah actually hehe..

I bought the seaweed at grocers, I bumped into sushi rice early on, bought and kept it at first. Got the vinegar though, it's not really necessary but it did helped to make the rice less sticky. 

Abang and adik love sushi. I took a chance to make sushi together. It's kind of dangerous to try out something unfamilliar during lockdown because we could order food only at certain times, and after 5 pm or so the delivery would only be made after 8:30 pm I think. Once an order is made, you will need to wait, and it was not convenient at maghrib time. No one wanted to wait.  

I cooked the sushi rice, grilled chicken, since we didnt have cucumber, I took out salad. Adik was excited to do it and she took over during rolling time. She laid the sushi seaweed sheet, put the rice on, cut chicken on, salad, she rolled without salad instead. It is quite filling eating a whole sushi roll like that. The moment has passed, but it sure will be missed even now, it was nice, quiet and slow living. 


Bila pengumuman diketahui, rutin yang biasa terhenti tetapj makanan macam biasa perlu diteruskan. Walau tak sedia, pasti digerakkann oleh perut perut yang lapar untuk disediakan. Saya suka sedia seeloknya sebelum lapar sememangnya waktu makan. Cuba la hehe.. 

Saya beli kepingan seaweed di grocers. Ternampak beras sushi lama sebelumnya, terus beli dan simpan. Beli juga cuka walau rasa nya tak petlu sangat, rasa masam tapi untuk mengelakkan nasi melekat nak guna juga. 


Abang dan adik gemar sushi, saya ambil peluang buat sushi ni bersama. Memang bahaya juga mengeksperimen sesuatu waktu lockdown, jika tidak jadi mood boleh jadi down terkapai-kapai bila lapar. Order makanan pun waktu tertentu, menunggu satu hal, jika lambat lepas maghrib, gelap tiada sesiapa berminat nak menunggu.

Masak beras sushi, bakar ayam, potong ayam dan sediakan salad disebabkan tiada timun. 

Adik teruja untuk buat sushi, menunggu saja dulu. Bila semua disediakan baru serah tugasan, adik letak sekeping seaweed, letak nasi dan ayam serta salad. Dia gulung kepingan seaweed yang berisi tetapi terkeluar pulak salad nya. 

Sushi yang sempurna memang mengenyangkan sebab semua ada dalam gulungan itu.  

Masa yang lepas pasti dikenang, walau sekarang mengimbas kembali, tenang, sunyi dan tidak tergesa-gesa, bersantai perlahan waktu pkp yang lalu.
