Tomato replacing tamarind | tomato ganti asam jawa
Cut pickled added | campur juga potongan asam keping
I picked up recipe bit here and there. First time cooking like this, though. I heard people asked my mom how she cooked, mom said she pressed tomato in her curry replacing tamarind. Orange sunquick cordial in chilli paste.
Eno in small batch of fritters. She said after she lived in the construction area, not many retail shop, that's the reason she substituted all the items as mentioned. There are more things I put in the list below. For mom in law, she grind anchovies for sauteeing to taste.
I list out here, mom or (kids called maktok) tips of cooking:
1. Tomato replaced tamarind
2. Orange sunquick replaced line or lemon
3. Eno replacing baking powder for small batch fritters
4. For the beef to get tender, she cut it first, put in the pan, pour water. Boil the water almostdry. Then she would fry. Sautee for curry or whatevercooking. (ala stock).
Since mom in law told me to put grind anchovies as that time kids were young. So I tried put shrimp paste or grind salted fish in some of my cooking.
So I made tomato fish curry, same like other curry no coconut milk but tomato and cut pickled (asamkeping) abang loved it so much, while for adik, I baked chicken coated with adabi KFC flour. It turned out amazingly similar to the colonel cooked :) I will post about it separately.

Saya ambil resepi sana sini dengan dengar dari perbualan. Bila sesiapa bertanya ibu saya letak apa dalam masakannya, beliau cakap dia perah beberapa biji tomato untuk menggantikan asam jawa.
Dia terus cerita oleh kerana rumah yang kami tinggal masa mula kawasan perumahan belum siap, jadi kedai kedai runcit berdekatan pun takda. Masa tu dia tahu bawa kereta ke tempat kerja dan balik ja. Dia letak sunquick dalam sambal belacan. Dia juga letak eno dalam cucur pengganti telur dan baking powder. Saya senaraikan cara alternatif ibu memasak.
Manakala ibu mertua, pernah berpesan kisar ikan bilis untuk menambah rasa. Jadi saya cuba letak belacan dalam kuah kari kali ini, sebabnya tak da ada apa perasa, ikan bilis pun tak da. Ikan tamban ada,. Ingat nak order, ingat nak keluar beli, kompius kejap bila fasa 2.ni hehe..
Saja senaraikan alternatif masakan ibu saya (maktok, anak-anak panggil) :
- Tomato pengganti asam jawa dalam gulai.
- Cordial sunquick oren untuk ganti limau atau limau kasturi buat sambal belacan
- Eno untuk buat cucur, penganti telur atau baking powder.
- Untuk melembutkan daging, potong dulu, masuk dalam belanga, tuang air setahap dengan daging, rebus, agak belum kering, masuklah minyak menumis atau apa - apa masakan hari tu.
Jadi, saya masak kari ikan dengan tomato dan sikit potongan asam keping, macam gulai biasa tetapi tanpa santan dan asam jawa je. Perasa belacan ok kan. Abang suka sangat. Untuk adik, saya bakar ayam ala goreng ayam disalut tepung adabi. Ala ala ayam kepci yang kolonel masak tu... Nanti buat asingla mengenainya.
